Fresh vegetables and fruits are not only a luxury, but a necessity and an opportunity for good business, too.
Vegetables and fruits in the middle of their production time are of the best taste, and quality, but of lower resistance and lowest price. Our project aims to introduce an alternative to actual storing technologies which are energy intensive, low-quality final products, and expensive. They are based on cleaning the products, cooling them at low temperatures, storing them in a normal atmosphere for several months, and putting them on the market. The cooling process is very energy inefficient, the products lose their original taste, their colors fade, and many of them got damaged and damage the products in the vicinity. That happens because the bacteria and fungi usually on their skin and inside them start the destruction process.
What is UNIQUE compared to the market’s state-of-the-art/competitors?
Out technology focuses on destroying most of the bacteria and fungi and the beginning of the storage process, after harvesting them and transporting them to storage capacity. It can be done by UV exposure or ozone exposure. After treatment, the products are stored in insulated chambers, but instead of powerful coolers and a normal atmosphere, we introduce a nitrogen-rich and oxygen-poor atmosphere, 12-16⁰C temperature storage, and keep it till they put6 it on the market. All destruction process of the products is blocked for as long as the atmosphere has very low oxygen. The process of storing products is supervised by automation and a smart system that presents the life and historical analysis of storage atmosphere parameters, humidity, temperature, color, and quality of the products. Before sending to market, the existing atmosphere is changed to a normal atmosphere and the temperature is reduced to 8 degrees, to comply with distribution and logistics technologies. Thus, we can eat tomatoes on Christmas with August flavor and taste and strawberries with July taste. Costs are much lower than classical storage technology, energy consumption is much lower, and pollution marks of the products are much lower than classical storage.
